Tea from Japan - Kabusecha Saemidori
Kabusecha are known as shaded tea. Tea bushes are covered a few days before harvest. This process will develop the umami flavor while limiting the astringency. The liquour here has a very rich aromatic profile with a mellow texture and is long lasting in the mouth (thanks to the umami flavor).
Brewing advice: This tea can be brewed multiple times in a small volume of water. In that case, double (or triple) the quantity of leaves to be infused. Then, make very short infusions starting at a very low temperature and then gradually increase.
