Originating from Fujian Province, this oolong tea is, in more ways than one, a wonderful surprise. It is in the heart of a tea garden situated near the town of Zhangping, at an altitude of 600 to 800 metres, that this mid-April harvest was processed into oolong tea. A rare Chinese tea bearing a PGI label, this Grand Cru, with its beautiful green leaves and yellow highlights, is the only Chinese oolong tea compressed into small 8g squares. The perfect amount for brewing a small teapot (60 cl). To fully appreciate the qualities of this oolong tea, we recommend two preparation methods: Using the European method, steep the whole compressed cake for 5 minutes in 600ml of boiling water; or, following the Chinese tradition, use a 200ml gaiwan. Quickly rinse the compressed leaves with boiling water, then steep for a first infusion of 45 to 60 seconds in water at 100°C. Repeat the infusion as many times as you like!
