This Shincha, or first spring harvest from Japan, comes from a garden situated at an altitude of 170 metres near Shizuoka, in Tsudono Aoi-Ju within the famous Honyama region. This is a shade-grown tea, for which the tea plants were covered and protected from the sun in the weeks leading up to the harvest. This process promotes the production of theanine, which enhances the tea’s mellow, umami-rich character. A unique and exclusive 20 kg batch crafted by the renowned Tea Master, Yuta Hiraoka, following a harvest on 15 May.The leaves have undergone an 80-second rolling process, which gives the dark green needles a powdery appearance.When brewed, it produces a green liquor with a smooth texture, developing vegetal and marine notes with a gentle aftertaste—perfectly umami.This is a perfect example of the producer’s expertise, offering us a tea with a liquor that is both intense and mellow, without any astringency.
