This Shincha, or first spring harvest, comes to us directly from the Shitajimaen plantation, located north of Shizuoka City in Ochiai Aoiku. The producer, Mr Sato, is a member of the prestigious ‘Shizuoka City Tea Hand-Rolling Preservation Society’. His family has been producing tea there for seven generations using the ‘Jien Jisei’ method, which involves growing and processing the tea themselves in their own gardens and factory.Harvested between 1 and 7 May from local Yabukita, Okuhikari and Sayamakaori tea plants in a garden situated at an altitude of 330 metres. When brewed, this Japanese green tea with its beautiful green needles produces a pale yellow liquor with a smooth texture, developing lovely vegetal notes and a subtle hint of iodine reminiscent of white fish flesh, with a slightly astringent finish.
